Casserole Recipes: Beef and Biscuit



Ingredients




  • 1 1/4 pounds lean ground beef


  • 1/2 cup chopped onion


  • 1/4 cup chopped green chile pepper


  • 1 (8 ounce) can tomato sauce


  • 2 teaspoons chili powder


  • 1/2 teaspoon garlic salt


  • 1 (10 ounce) can refrigerated buttermilk biscuit dough


  • 1 1/2 cups shredded Monterey Jack cheese, divided


  • 1/2 cup sour cream


  • 1 egg, lightly beaten






Directions





  1. Preheat oven to 375 degrees F (190 degrees C).




  2. In a large skillet, brown the ground beef, onion and green chile pepper; drain. Stir in tomato sauce, chili powder ,and garlic salt. Simmer while preparing the biscuits.




  3. Separate biscuit dough into 10 biscuits. Pull each biscuit into 2 layers. Press 10 biscuit halves on the bottom of a 9-inch pie dish to form bottom crust. Reserve the other 10 biscuit halves for the top layer.

CALAMARI, BROCCOLI AND ENDIVE,….a nice broccoli recipe to try….delicious!


INGREDIENTS


* 1 lb squid (calamari), cleaned * 1 lb broccoli crowns * 1/2 head endive (tops and center) * 3-4 cloves garlic, thinly sliced * 1 shallot, minced (optional) * 1/4 teaspoon red pepper flakes * 4 tablespoons extra virgin olive oil (more if needed) * 1/2 cup black olives, sliced or chopped * 1/4 teaspoon each basil and oregano * salt and pepper, to taste (or Morton’s Hot Salt) * a few drops balsamic vinegar * 1 packet True Lemon or 1 teaspoon lemon juice (optional) * Romano cheese (for sprinkling)


INSTRUCTIONSPrepare squid by washing well, removing center tubes. Leave tops whole (the purple part) and slice the white portion into rings. (Or purchase pre-cleaned squid at the fish market).


In a skillet, saute squid over high heat for 5 minutes in olive oil.Add garlic (and shallot if using), broccoli crowns and red pepper flakes. Stir in basil and oregano. Add additional olive oil to coat all if required. Saute 5 minutes over medium heat and then reduce heat and cover for 5 more minutes. Broccoli should remain a bright green, with tinges of browning, but should never become an olive green (if it becomes olive green then the broccoli has been overcooked).


Chop black olives if you’re using oil cured olives, or if you have ripe canned and pitted olives, slice into rings and add to pan. Add washed endive tops and the center (heart) of the head. Leave theheavy bottom stalks of the endive for soup.


Add balsamic vinegar, True Lemon or lemon juice (if using). Saute 2-3 minutes more or until broccoli can be pierced with a fork (try one – it should still have a very slight crunch to it) and the endive is just wilted.


This can be prepared without the balsamic vinegar or the lemon, but finishing with the these two ingredients adds a uniquely Sicilian style tanginess that really makes the dish authentic. Sprinkle with a touch of Hot Salt before serving and a tablespoon of grated Romano cheese to add a final kick.This can be served on its own, or may be served over pasta or rice/ The broccoli recipe is ready to serve….great taste! Ingredients




  • 1 pound ground beef


  • 1/2 cup ketchup


  • 1/2 cup bread crumbs


  • 1 teaspoon onion powder


  • 1/2 teaspoon steak seasoning, or to taste


  • salt and pepper to taste


  • 2 teaspoons vegetable oil


  • 1 large onion, cut into chunks


  • 1 cup ketchup


  • 1/2 cup water, or as needed






Directions





  1. In a medium bowl, mix together the ground beef, 1/2 cup ketchup, bread crumbs, onion powder, steak seasoning, salt, and pepper. Form into small fat hamburger patties, or meatballs.




  2. Heat oil in a large heavy skillet over medium-high heat. Place the patties in the skillet, and cook until browned on both sides. Remove patties to a plate, and drain grease from the skillet.




  3. In the same pan, slowly stir together the remaining ketchup and water if the mixture seems thin, add a bit more ketchup, or if it is thick, add more water. Add the onion, and bring to a boil. Reduce heat to medium-low. Return the patties to the pan, cover, and simmer for 30 minutes. Stir after the 30 minutes, and if the gravy is still thin, continue simmering with the lid off until gravy thickens.

You will know if the chicken is cooked when its legs begin to loosen from the body.

  • 4 pineapple rings


  • 1/2 cup ketchup

Heat 1 tbsp. butter in a non-stick skillet over medium heat; melt completely.Add 2 tbsp. flour. Cook 2 minutes on medium. Stir constantly.Slowly add 3/4 cup 2% or whole milk, stirring constantly, until a “gravy-like” consistency has been achieved.Heat until just before boiling, stirring. Remove from heat and set aside.

Olive Garden Chicken Scampi Ingredients…


Scampi Sauce:


1 cup (2 sticks) butter2 tbsp. fresh, crushed garlic2 tbsp. chicken stock3/4 cup dry white wine (chablis or riesling are best)1 cup water1/4 cup white sauce (see recipe above)1 tsp. crushed red pepper2 tbsp. Italian seasoningBlack pepper, to tasteThe Rest:1/2 pkg. angel hair pasta, cooked and drained2 large, boneless & skinless chicken breasts, sliced into desired size tenderloins.1 thinly sliced green bell pepper1 thinly sliced yellow bell pepper1 thinly sliced red bell pepper1/2 red onion (more, if desired), thinly slicedExtra virgin olive oil, as needed10 whole garlic cloves (mmmmmmmm!)

Scampi Sauce:


In medium saucepan, melt butter over low heat.Add garlic, Italian seasoning, and crushed red pepper. Saute for 2 minutes.Add wine, water, and chicken stock. Stir until well combined and simmer for 30 minutes, stirring occasionally.Add white sauce and stir until slightly thickened, about 3-5 minutes.The Rest:Drizzle olive oil into the bottom of a small sautee pan over low heat.When oil is warm, add garlic cloves and cover with lid.Braise garlic for 15-18 minutes on low heat. Garlic should turn out soft and golden.Drizzle olive oil into the bottom of a large saute pan over medium heat.When oil is hot, add chicken tenderloins, turning when 1/4 of the way cooked.When chicken is about half-way cooked, add bell peppers and onions. Saute for 2-3 minutes.Add angel hair pasta, sauce, and garlic cloves. Saute until sauce is heated through and chicken is completely cooked, about 3 minutes.Enjoy!

In shallow dish, combine flour, salt, pepper and oregano; stir to blend. In heavy skillet, heat oil and butter until butter melts and mixture bubbles lightly. 1 cup pale ale or other light-colored beer


1 cup whole-wheat pastry flour (see Ingredient Note) or all-purpose flour


1 teaspoon Dijon mustard


1/2 teaspoon salt, divided


2 tablespoons canola oil, divided


1 pound raw shrimp (13-15 per pound; see Ingredient Note), peeled and deveined, tails left on


Freshly ground pepper to taste


After all those ingredients prepared, simply follow this instruction:


Whisk beer, flour, mustard and 1/4 teaspoon salt in a medium bowl until smooth. You’ll need to cook the shrimp in two batches. Wait to batter the second batch until the first is cooked. For the first batch, heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Hold shrimp by the tail and dip in the batter one at a time. Let any excess batter drip off, then add the shrimp to the hot oil, making sure they aren’t touching. Cook, turning once and adjusting the heat as necessary to prevent burning, until golden brown on the outside and curled, 3 to 4 minutes total. Transfer to a platter. Wipe out the pan. Add the remaining 1 tablespoon oil to the pan and heat over medium-high. Batter and fry the remaining shrimp. Season all the shrimp with the remaining 1/4 teaspoon salt and pepper and serve immediately. Ingredient notes: Whole-wheat pastry flour, lower in protein than regular whole-wheat flour, has less gluten-forming potential, making it a better choice for tender baked goods. You can find it in the natural-foods section of large super markets and natural-foods stores. Store in the freezer. Shrimp is usually sold by the number needed to make one pound. For example, “21-25 count” means there will be 21 to 25 shrimp in a pound. Size names, such as “large” or “extra large,” are not standardized, so to be sure you’re getting the size you want, order by the count (or number) per pound. Both wild-caught and farm-raised shrimp can damage the surrounding ecosystems when not managed properly. Fortunately, it is possible to buy shrimp that have been raised or caught with sound environmental practices. Look for fresh or frozen shrimp certified by an independent agency, such as Wild American Shrimp or Marine Stewardship Council. If you can’t find certified shrimp, choose wild-caught shrimp from North America–it’s more likely to be sustainably caught.

Cook chicken, onion wedges, dried marjoram, if using, garlic, and salt in hot oil for 3 to 4 minutes or until no pink remains in chicken, stirring often. Stir lemon juice into mixture in skillet. Cook and stir for 1 minute more, scraping up brown bits. Gently toss pasta with chicken mixture and fresh marjoram, if using. Serve immediately. Makes 4 servings.*Note: If lemon-pepper pasta is not available, add 1/4 teaspoon freshly ground black pepper and 1/4 teaspoon grated lemon peel to 2 cups plain cooked pasta just before tossing with chicken.

How To Write A Recipe

It amazes me how many great chefs can cook fantastic dishes yet fail to be able to write recipes in a clear and concise way that makes for easy reading and understanding. Many could do with working in manufacturing industry for a number of weeks and learn the skill involved in preparing a bill of materials for a product because in this way they would get to understand how certain ingredients can be grouped together to make a “sub assembly” before the preparation into the final assembly.


Some top chefs have mastered this of course and they truly produce excellent food, freshly prepared and in a short space of time. It simply boils down to storing the food in it’s sub assembly state until you’re ready to serve then throw everything together and give it a blast.


I’m a barbecue and smoker enthusiast and I love to experiment with different marinades, rubs and mops as well as making some really tasty accompaniments for my BBQ parties. It wasn’t until last year that a friend suggest I should “bottle” my knowledge and share it but my confidence wasn’t too great because first of all I’m not a professional chef and second I’ve never written a recipe.


I guess everybody has to start somewhere and when I thought about my day job it in manufacturing and also how some recipes really annoy me I found the way forward. All it took then was to think about how I prepared the meal and write it down.


One thing that really frustrates me is when there’s no clear information about how long the recipe is going to take, admittedly it’s not that important for barbecue recipes because the BBQ cooking is part of the fun and if you’re into smoking most people already know the rule of thumb that it take a minimum of 60 minutes per pound of meat and a thermometer to measure the internal temperature of the food. What’s really annoying is when you get half way through a recipe and then see the words “put the mix to one side and marinate overnight”.


So aside from ensuring that the method clearly states how to put the ingredients together in a manner that ensures the final assembly is as easy as possible, it’s essential to state clearly in the opening summary whether that are any time constraints with the recipe. For another example just a quick note at the top of the page to state preparation time and cooking time will work wonders.


There is a protocol when writing ingredients that the largest constituents go first running down to the inevitable pinch of salt and pepper at the bottom. For me it doesn’t make sense because I like to see the ingredients together that get mixed together. For example if we’re doing a rub then I would prefer to see all the rub ingredients listed separately, this way it’s clear to read and I don’t forget anything. That’s my way, you may have yours but if together it brings more great recipes to the internet then hopefully we’re onto a winner.

  • 1 large potato, peeled and shredded


  • 1 cup shredded Swiss cheese


  • 1 cup chopped fresh mushrooms


  • 2 pounds lean ground beef

Dissolve 1 1/2 teaspoons of salt into 1 1/2 cups of warm water. Drizzle this slowly into the flour mixture and mix until you have a soft dough. Knead for 1 minute, adding flour or small amounts of lukewarm water if needed. The dough should not be too wet or dry. Once it is at the right consistency, turn bowl over to cover the dough and let it rest for about 20 minutes. Next, divide the dough into 12 pieces and form into balls. As you form and roll the balls, coat your hands with a little bit of shortening. Flatten and cover balls with plastic wrap and let rest for 20-30

Burgers: Delicious Grilled Hamburgers



Ingredients




  • 1 pound lean ground beef


  • 1 tablespoon Worcestershire sauce


  • 1 tablespoon liquid smoke flavoring


  • 1 teaspoon garlic powder


  • 1 tablespoon olive oil


  • seasoned salt to taste






Directions





  1. Preheat a grill for high heat.




  2. In a medium bowl, lightly mix together the ground beef, Worcestershire sauce, liquid smoke and garlic powder. Form into 3 patties, handling the meat minimally. Brush both sides of each patty with some oil, and season with seasoned salt.
